It never fails! The last banana standing gets sad and overripe. This overripe banana cookies recipe is no-bake and made in one bowl. You’ll wish for overripe bananas!
Why Banana Cookies?
I blame “dadaeats” for my new obsession. She posted a genius Banana Bread Freezer Cookie recipe on her Instagram recently. I didn’t have all the ingredients available. What did I do? I set out to make my own version of overripe banana cookies!
Genius Hack to Store Bananas
Smoothies are on my daily menu so, typically I store the last nanners in the freezer.
Frozen bananas will add a thick, creamy, milkshake-like texture to any smoothie. Use less liquid and you’ll have a spoonable smoothie bowl!
Saw it on Instagram: Don’t bother peeling and cutting up your bananas. They come with their own storage container. Just throw the whole banana in the freezer!
To use, simply run under warm water for a few seconds and the skin slides right off.
Back to the cookies! One ripe banana and a few simple ingredients morph into an amazing treat.
Banana No-Bake Cookies
Ingredients
- 1 overripe banana room temperature
- 4 tbsp cashew butter divided
- 1/2 cup almond flour
- 1/2 cup chocolate protein powder
- 1/2 cup chocolate chips
- sea salt
Instructions
- Mix room temperature banana and 2 Tbsp cashew butter until smooth. No fancy equipment necessary, I use a spoon.
- Add almond flour and chocolate protein to the mix. Mix until sticky.
- Drop by tablespoon onto parchment or wax paper. If you want to be extra, make them BIG!
- Using same bowl, warm up dates and remaining 2 tbsp cashew butter, until soft. Mix well, and top your banana cookies with the date mixture. Pop into freezer.
- Same bowl 🙂 Melt chocolate chips. On a new wax paper, dollop the chocolate and place your banana cookie on it, then top with more chocolate. Repeat until chocolate is gone. Top each with a pinch of sea salt.
- Let your cookies chill in the freezer for at least 30 minutes.Enjoy!
