This apple kuchen recipe originated in Germany, and has been passed down many generations. It was given to me in a handwritten recipe book from my dear mother-in-law. Have a square with morning coffee, or enjoy with your evening tea. Either way, know that this recipe comes to you with love.
WAITING FOR APPLES
Last week I spotted a squirrel slumped over a fence post looking quite pleased with himself. I was at a bad angle, so I moved to a window with a better view. I spit out my coffee when I witnessed the mischief.
That dirty little bandit was gnawing on one of my green apples! One of the green apples I’ve waited 6 years to try. We had to remove a mature apple tree for a fence install and I convinced my husband to plant another. It’s a dwarf tree which takes a few more years to produce. I could tell early summer this was an apple year.
After my first apple bite I can see why squirrel was an apple bandit. Crunchy, tangy, and sweet. What’s not to like! And, perfect for apple kuchen!
Apple Kuchen
Ingredients
- 3 cups flour
- 2 tsp baking powder
- 1 tsp salt
- 1/2 cup butter softened
- 13/4 cup sugar divided
- 2 eggs beaten
- 1 tsp vanilla
- 1 cup milk
- 4 cups apples peeled, cored and sliced into sixteenths
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 375°F. Mix flour, baking powder and salt; set aside.
- Beat butter and 1-1/2 cups of the sugar in large bowl with electric mixer on medium speed until light and fluffy.
- Blend in eggs and vanilla.
- Add flour mixture alternately with milk, mixing well after each addition.
- Pour into greased 13×9-inch baking pan; top with apples.
- Mix remaining 1/4 cup sugar and the cinnamon; sprinkle over apples.
- Bake 35 to 40 min. or until toothpick inserted in center comes out clean.
- Cut into 16 squares to serve.
