Mix room temperature banana and 2 Tbsp cashew butter until smooth. No fancy equipment necessary, I use a spoon.
Add almond flour and chocolate protein to the mix. Mix until sticky.
Drop by tablespoon onto parchment or wax paper. If you want to be extra, make them BIG!
Using same bowl, warm up dates and remaining 2 tbsp cashew butter, until soft. Mix well, and top your banana cookies with the date mixture. Pop into freezer.
Same bowl :) Melt chocolate chips. On a new wax paper, dollop the chocolate and place your banana cookie on it, then top with more chocolate. Repeat until chocolate is gone. Top each with a pinch of sea salt.
Let your cookies chill in the freezer for at least 30 minutes.Enjoy!
